  • Total Time: 1 hour
  • Yield: 8 servings 1x

Ingredients

Scale

For the Cake:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup strong brewed coffee, cooled
  • ½ cup Baileys Irish Cream

For the Baileys Glaze:

  • 1 cup powdered sugar
  • 23 tbsp Baileys Irish Cream
  • ½ tsp vanilla extract

Optional Decorations:

  • Chocolate shavings
  • Whipped cream
  • Espresso powder, for dusting

Instructions

  • Preparing the Cake Batter:

    • Preheat oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan.
    • In a bowl, whisk together flour, baking powder, baking soda, and salt.
    • In another large bowl, cream butter and sugar until light and fluffy.
    • Beat in eggs one at a time, then mix in vanilla extract.
    • Gradually add the dry ingredients, alternating with coffee and Baileys, mixing until smooth.
  • Baking the Cake:

    • Pour batter into the prepared loaf pan and smooth the top.
    • Bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
    • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Making the Baileys Glaze:

    • In a small bowl, whisk together powdered sugar, Baileys, and vanilla extract until smooth.
    • Adjust the consistency by adding more Baileys for a thinner glaze or more powdered sugar for a thicker drizzle.

  • Decorating the Cake:

    • Drizzle the Baileys glaze over the cooled cake.
    • Sprinkle with chocolate shavings or a dusting of espresso powder for a coffeehouse-style finish.
    • Serve with a dollop of whipped cream for extra indulgence.

Notes

  • Storage: Keep in an airtight container at room temperature for up to 3 days, or refrigerate for longer storage.
