Instructions

1. Preparing the Blackberries

  1. Mash the blackberries in a bowl to release their natural juices. Strain out seeds if desired. Set aside.

2. Making the Cookie Dough

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well incorporated.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.

3. Adding the Blackberries and Mix-Ins

  1. Gently fold in the mashed blackberries, stirring just enough to incorporate the color without overmixing.
  2. If using, add white chocolate chips and lemon zest for extra flavor.

4. Baking the Cookies
