Instructions
1. Preparing the Blackberries
- Mash the blackberries in a bowl to release their natural juices. Strain out seeds if desired. Set aside.
2. Making the Cookie Dough
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
3. Adding the Blackberries and Mix-Ins
- Gently fold in the mashed blackberries, stirring just enough to incorporate the color without overmixing.
- If using, add white chocolate chips and lemon zest for extra flavor.
4. Baking the Cookies
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- Scoop the dough onto the sheet, spacing cookies about 2 inches apart.
- Bake for 10–12 minutes or until edges are lightly golden.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
