Instructions
- Combine mashed potatoes, cheddar cheese, Parmesan, butter, garlic powder, salt, pepper, and egg in a mixing bowl. Mix until smooth and well combined. Chill the mixture for 20–30 minutes to make it easier to shape.
- Scoop small portions of the chilled mixture (about 1–2 tablespoons each) and roll them into balls. Flatten slightly if desired, ensuring the cheese is evenly distributed.
- Set up a breading station: coat each ball in flour, dip in beaten egg, and roll in breadcrumbs. Press gently to ensure the coating adheres. Repeat for all puffs.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the puffs in batches for 2–3 minutes per side until golden brown and crispy. Drain on paper towels before serving.

- For gluten-free options, use gluten-free breadcrumbs and flour.
- Vegan alternative: Substitute dairy-free cheese and plant-based butter.
- Baked version: Arrange coated puffs on a baking sheet, spray with cooking oil, and bake at 400°F (200°C) for 15–20 minutes.
- Freeze uncooked puffs on a baking sheet, then transfer to a freezer bag. Fry directly from frozen, adding 1–2 minutes to the cooking time.
