Instructions
- In a saucepan, combine the pitted cherries, granulated sugar, lemon juice, cornstarch, and almond extract (if using). Cook over medium heat, stirring frequently, until thickened.
- Roll out the pie dough on a floured surface and cut out circles.
- Place a spoonful of cherry filling on one dough circle. Brush edges with water or egg wash, cover with another circle, and seal.
- Preheat the oven to 375°F (190°C). Place pies on a lined baking sheet. Brush with egg wash and sprinkle with turbinado sugar.
- Bake for 20-25 minutes until golden brown. Let cool slightly before serving.
