Instructions

  1. Preparing the Ingredients: Preheat the oven to 375°F (190°C). Slice the chicken, onion, and bell peppers into even pieces for consistent cooking. Measure out all spices and shred the cheese.
  2. Cooking the Chicken and Veggies: Heat olive oil in a skillet over medium-high heat. Add chicken pieces and cook until lightly browned. Remove from the pan and set aside. In the same skillet, sauté onions and bell peppers until softened. Add garlic, chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Return chicken to the skillet and toss everything together.
  3. Assembling the Casserole: Spread cooked rice (if using) evenly across the bottom of a greased baking dish. Layer the chicken and veggie mixture on top. Sprinkle half of the shredded cheese over the mixture.
