  • 10 cups water
  • ⅔ cup baking soda
  • For the Cinnamon Sugar Coating:
  • ½ cup unsalted butter (melted)
  • ½ cup granulated sugar
  • 2 tsp ground cinnamon

Instructions

  1. Preparing the Dough: In a large bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until frothy. Add flour, salt, and melted butter, mixing until a dough forms. Knead on a floured surface for 8–10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
  2. Shaping the Pretzels: Punch down the risen dough and divide into 8 equal portions. Roll each piece into a long rope (about 24 inches), then shape into a pretzel by forming a U-shape, crossing the ends, and folding them back down. Place on a parchment-lined baking sheet.
  3. Baking Soda Bath and Baking: Preheat the oven to 450°F (230°C). Bring water and baking soda to a boil in a large pot. Dip each pretzel into the boiling water for 30 seconds, flipping halfway through. Place back on the baking sheet and bake for 10–12 minutes until golden brown.
  4. Coating with Cinnamon Sugar: While the pretzels are still warm, brush generously with melted butter and roll in the cinnamon sugar mixture until fully coated.
