Ingredients
For the Dish:
- 4 cod fillets (about 6 oz each)
- 4 tbsp unsalted butter (melted)
- 2 lemons (zested and juiced)
- 2 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (optional, for color)
- 2 tbsp olive oil
- Fresh parsley (chopped, for garnish)
Optional Sides:
- Steamed asparagus
- Roasted potatoes
- Quinoa or wild rice
Instructions
- Prepare the Cod:
- Preheat oven to 400°F (200°C).
- Pat the cod fillets dry with paper towels to remove excess moisture.
- Season both sides with salt, black pepper, and paprika.
- Arrange the fillets in a baking dish in a single layer.
- Make the Lemon Butter Sauce:
- In a small bowl, mix the melted butter, lemon juice, lemon zest, minced garlic, and olive oil.
- Spoon the mixture evenly over the cod fillets, ensuring each piece is coated.
- Bake the Cod:
- Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Finishing Touches:
- Remove the cod from the oven and garnish with fresh chopped parsley.
- Serve immediately with optional sides and additional lemon slices for extra brightness.
Notes
- For added spice, sprinkle red pepper flakes or cayenne pepper before baking.
- Use fresh cod fillets for the best texture, but if using frozen fillets, ensure they are fully thawed and patted dry before seasoning.
- Pair with a glass of white wine, such as Sauvignon Blanc or Chardonnay, for a delightful dining experience.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or microwave.
