- 2 tbsp melted butter
- 4 boneless, skinless chicken tenders, cut into bite-sized pieces
- 1 cup buttermilk (for soaking chicken)
- 1 cup vegetable oil (for frying)
- Salt and pepper to taste
- Maple syrup and your favorite toppings (fresh berries, whipped cream) for serving
Instructions
- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt.
- In a separate bowl, combine milk, egg, and melted butter. Pour the wet ingredients into the dry ingredients and whisk until just combined.
- Place the chicken pieces in a shallow dish and cover with buttermilk. Season with salt and pepper and let it marinate for 15-30 minutes.
- Heat vegetable oil in a skillet over medium-high heat and fry the chicken pieces for 5-7 minutes until golden brown and cooked through.
- Preheat your waffle iron and pour the waffle batter onto the hot iron, cooking until golden brown and crispy.
Notes
- Donβt overmix the batter to avoid tough waffles.
- Ensure oil is hot enough for crispy chicken.
- Keep fried chicken warm in the oven while making waffles.
- For buttermilk, mix 1 tbsp of lemon juice or vinegar with 1 cup of milk.
