Ingredients
Scale
- 1½ cups all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ¾ cup milk (or buttermilk for extra fluffiness)
- 2 tbsp melted butter (or vegetable oil)
- Optional: 1 tbsp fresh herbs (parsley, chives, or thyme)
Instructions
- In a mixing bowl, whisk together flour, baking powder, and salt. Add fresh herbs if desired.
- Pour in milk and melted butter, stirring gently until just combined (batter should be slightly lumpy).
- Let batter rest for 5 minutes to activate baking powder.
- Drop tablespoon-sized portions into simmering soup or stew. Cover and cook for 15 minutes without peeking.
Notes
- Don’t overmix – lumpy batter ensures tender dumplings.
- Keep the lid on while cooking to trap steam for maximum fluffiness.
- Test doneness with a toothpick – it should come out clean.
- For variations: add cheese, different herbs, or use gluten-free flour.
