Ingredients
Scale
- 1 pound pasta (such as penne, rotini, or your favorite shape)
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 8 ounces cream cheese, softened
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional: cooked ground beef, shredded chicken, or vegetables like bell peppers or corn
Instructions
- Fill a large pot with water and bring to a boil. Add pasta and cook according to package directions until al dente.
- In a large skillet, combine the undrained Rotel tomatoes, softened cream cheese, garlic powder, and onion powder. Heat over medium-low, stirring until the cream cheese melts and the sauce is smooth.
- Drain the cooked pasta using a colander and shake off excess water.
- Add the drained pasta to the Rotel sauce, stirring to coat. Optionally add cooked protein or vegetables and season with salt and pepper.
- Serve immediately and enjoy!
Notes
- Cream Cheese: Ensure it’s softened for a smoother sauce.
- Spice Level: Adjust Rotel for desired spiciness; use mild for less heat.
- Add Protein: Ground beef, shredded chicken, or beans are great additions.
- Vegetable Boost: Add sautéed bell peppers, onions, or corn.
- Cheese Please: Top with shredded cheddar or Monterey Jack for extra creaminess.
