Ingredients
Scale
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 1 large egg
- 1 tbsp fresh lemon zest
- 2 tbsp fresh lemon juice
- 1 ½ cups all-purpose flour
- ¼ tsp salt
- ¼ tsp baking powder
- ⅛ tsp baking soda
- ½ cup powdered sugar (for rolling)
Instructions
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Mix in the egg, lemon zest, and lemon juice.
- In a separate bowl, whisk the flour, salt, baking powder, and baking soda.
- Gradually combine the dry ingredients with the wet mixture until a soft dough forms.
- Chill the dough for 30 minutes for easier handling.
- Scoop tablespoon-sized portions, roll into balls, and coat generously in powdered sugar.
- Preheat the oven to 350°F (175°C). Place the dough balls on a lined baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes until the edges are lightly golden. Let them cool slightly before serving.
Notes
- Use fresh lemon juice and zest for the brightest flavor.
- Don’t skip chilling the dough—it prevents spreading.
- Roll the cookies twice in powdered sugar for extra crackle.
- Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
