Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter (melted)

For the Sparkling Lemonade Filling:

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • ¼ cup cornstarch mixed with ½ cup water
  • 1 cup sparkling lemonade (chilled)
  • Zest of 1 lemon

For the Golden Topping:

  • Whipped cream (store-bought or homemade)
  • Edible gold dust or sprinkles
  • Optional: Gold leaf or white chocolate shards

Instructions

1. Preparing the Crust

  1. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter.
  2. Press the mixture into a 9-inch pie dish, covering the bottom and sides evenly.
  3. Chill in the refrigerator for 20–30 minutes to set.

2. Making the Sparkling Lemonade Filling

  1. In a saucepan over medium heat, whisk together lemon juice, sugar, and cornstarch slurry (cornstarch mixed with water).
  2. Stir continuously until the mixture thickens and becomes glossy (about 5 minutes).
  3. Remove from heat and let cool slightly. Stir in chilled sparkling lemonade.
  4. Pour the filling into the prepared crust and spread evenly.

3. Adding the Golden Touch

  1. Refrigerate the pie for at least 4 hours (or overnight) until fully set.
  2. Before serving, top with whipped cream and sprinkle with edible gold dust or gold sprinkles.
  3. Optionally, garnish with gold leaf or white chocolate shards for extra magic.

4. Serving & Enjoying

  1. Slice and serve chilled for a refreshing, fizzy twist on a classic lemon pie.
  2. Pair with a Harry Potter movie marathon or a themed party!

Notes

  • Make-Ahead Tip: The pie can be made up to 2 days in advance and stored in the fridge.
  • For a richer filling: Substitute part of the lemon juice with orange juice for a more complex citrus flavor.

  • Vegan Alternative: Use plant-based butter for the crust and coconut whipped cream for the topping.
