Instructions

  1. Marinating the Chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, and pepper. Add the chicken cubes and toss to coat evenly. Cover and refrigerate for at least 30 minutes (or up to 4 hours) to allow the flavors to meld.
  2. Preparing the Tzatziki Sauce: Grate the cucumber and squeeze out excess moisture using a clean kitchen towel or paper towels. In a mixing bowl, combine the yogurt, grated cucumber, garlic, lemon juice, dill, olive oil, salt, and pepper. Stir until smooth and creamy. Taste and adjust seasoning if needed. Refrigerate until ready to serve.
  3. Assembling and Grilling the Skewers: Preheat the grill or grill pan over medium-high heat. Thread the marinated chicken cubes onto skewers, leaving a small space between each piece for even cooking. Lightly oil the grill grates to prevent sticking. Grill the skewers for 3–4 minutes per side or until the chicken is cooked through and slightly charred on the edges. Remove from the grill and let rest for 5 minutes.
