  • Total Time: 1 hour 27 minutes
  • Yield: 24 cookies 1x

Ingredients

Scale
For the Cookies:
  • 2 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup cream soda
For the Butterbeer Icing (Red and Gold):
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Red and gold gel food coloring

Instructions

1. Preparing the Cookie Dough
  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2 minutes).
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. Gradually mix in the flour mixture, alternating with the cream soda, until a soft dough forms.
2. Chilling the Dough
  1. Cover the dough and refrigerate for at least 1 hour to prevent spreading during baking.
3. Baking the Cookies
  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Roll the chilled dough into 1.5-inch balls and place them on the baking sheet, leaving space between each.
  3. Bake for 10-12 minutes or until the edges are set but the centers remain soft.
  4. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
4. Making the Fiery Swirl Icing
  1. In a mixing bowl, beat the butter until smooth. Gradually add powdered sugar, mixing until combined.
  2. Add heavy cream and vanilla extract, beating until fluffy.
  3. Divide the icing into two bowls; tint one with red food coloring and the other with gold.
  4. Transfer both icings into a piping bag, placing each color on one side for a swirled effect.
5. Decorating the Cookies
  1. Pipe or spread the red and gold icing onto each cooled cookie in swirling patterns.
  2. Optionally, add edible glitter or sprinkles for extra magic.
  3. Let the icing set before serving.

Notes

  • Chilling the dough is essential for keeping the cookies thick and soft.
  • If the icing is too thick, add a small splash of cream to reach the desired consistency.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • Freeze undecorated cookies for up to 2 months.
