This sparkling lemonade pie recipe is inspired by the whimsical treats of Honeydukes and is a delightful addition to any gathering.

  • Total Time: 4 hours 30 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • For the Crust:
    • 1 ½ cups graham cracker crumbs
    • 5 tablespoons melted butter
    • ¼ cup granulated sugar
  • For the Filling:
    • 1 pound fresh strawberries, hulled and sliced
    • ½ cup granulated sugar
    • ½ cup lemon juice, freshly squeezed
    • 1 package (8 ounces) cream cheese, softened
    • 1 can (14 ounces) sweetened condensed milk
    • 1 teaspoon vanilla extract
  • For the Sparkling Topping:
    • 1 cup lemon-lime soda (chilled)
    • 1 tablespoon gelatin powder
    • Fresh strawberry slices and lemon wedges for garnish

Instructions

  1. Prepare the crust by combining graham cracker crumbs, melted butter, and sugar in a medium bowl. Press firmly into a 9-inch pie plate and bake at 350°F (175°C) for 8-10 minutes. Let cool.
  2. For the filling, crush ¾ of the strawberries with sugar and lemon juice. In another bowl, beat the cream cheese, then mix in condensed milk and vanilla extract. Combine with crushed strawberries.
  3. Pour the filling into the cooled crust, arrange remaining strawberry slices on top and refrigerate for at least 4 hours.
  4. For the sparkling finish, dissolve gelatin in cold water, then mix with warmed lemon-lime soda. Pour over pie and chill for another 30 minutes before serving.

Notes

  • Use fresh strawberries for the best flavor.
  • Ensure cream cheese is fully softened to avoid lumps.
  • Chill pie thoroughly for a firm filling.
  • Add lemon zest to the crust for extra flavor.
  • Reduce sugar for a less sweet pie.
