- For the Sparkling Topping:
- 1 cup lemon-lime soda (chilled)
- 1 tablespoon gelatin powder
- Fresh strawberry slices and lemon wedges for garnish
Instructions
- Prepare the crust by combining graham cracker crumbs, melted butter, and sugar in a medium bowl. Press firmly into a 9-inch pie plate and bake at 350°F (175°C) for 8-10 minutes. Let cool.
- For the filling, crush ¾ of the strawberries with sugar and lemon juice. In another bowl, beat the cream cheese, then mix in condensed milk and vanilla extract. Combine with crushed strawberries.
- Pour the filling into the cooled crust, arrange remaining strawberry slices on top and refrigerate for at least 4 hours.
- For the sparkling finish, dissolve gelatin in cold water, then mix with warmed lemon-lime soda. Pour over pie and chill for another 30 minutes before serving.
