Scale
For the Pie Crust:
- 1 ½ cups all-purpose flour
- ½ teaspoon salt
- ½ cup unsalted butter (cold, cubed)
- 3–4 tablespoons ice water
For the Toffee Crunch Layer:
- 1 cup granulated sugar
- ¼ cup unsalted butter
- 2 tablespoons light corn syrup
- ½ teaspoon baking soda
- ½ cup chopped nuts (optional, for extra crunch)
For the Vanilla Cream Filling:
- 2 cups heavy cream
- 1 teaspoon vanilla extract
- ¼ cup powdered sugar
For the Caramel Glaze:
- ½ cup caramel sauce
- 1 tablespoon cream soda (optional for a Butterbeer twist)
Instructions
1. Prepare the Pie Crust:
- In a mixing bowl, combine the flour and salt.
- Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
- Shape the dough into a disc, wrap in plastic, and chill for at least 30 minutes.
- Roll out the dough on a lightly floured surface, then transfer it to a 9-inch pie pan.
- Trim and crimp the edges, then chill for another 15 minutes.
- Blind-bake at 375°F (190°C) for 15 minutes with pie weights, then remove weights and bake for another 10 minutes until golden brown. Let cool.
2. Make the Toffee Crunch Layer:
- In a saucepan over medium heat, melt sugar, butter, and corn syrup, stirring constantly.
- Once the mixture turns deep amber (about 5–7 minutes), remove from heat and stir in baking soda (and nuts, if using).
- Pour onto a parchment-lined baking sheet and let it cool completely.
- Once hardened, break into small crunchy pieces.
3. Whip the Vanilla Cream Filling:
- In a large mixing bowl, beat heavy cream, vanilla extract, and powdered sugar until stiff peaks form.
- Keep refrigerated until ready to assemble.
4. Assemble the Pie:
- Sprinkle the toffee crunch layer over the cooled pie crust.
- Spread the vanilla cream filling evenly over the toffee layer.
- Drizzle with caramel glaze for a glossy finish.
