Ingredients
- For the Crust: 1 1/2 cups graham cracker crumbs, 1/2 cup melted butter, 1/4 cup sugar
- For the Cheesecake Filling: 32 oz cream cheese (softened), 1 (3.4 oz) box butterscotch pudding mix, 1 cup sour cream, 4 large eggs, 1 teaspoon vanilla extract
- For the Butterscotch Swirl: 1/2 cup butter, 1 cup packed brown sugar, 1/2 cup heavy cream, 1 teaspoon vanilla extract, 1/4 teaspoon salt
- Optional: Hufflepuff-themed candies, extra butterscotch drizzle for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper.
- Prepare the Crust: Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of the prepared pan. Bake for 8-10 minutes. Let cool completely.
- Make the Cheesecake Filling: In a large bowl, beat cream cheese until smooth. Add butterscotch pudding mix and sour cream; mix until well combined. Beat in eggs one at a time, then stir in vanilla extract.
- Prepare the Butterscotch Swirl: In a saucepan, melt butter over medium heat. Stir in brown sugar and cook, stirring constantly, until sugar is dissolved. Gradually whisk in heavy cream and bring to a simmer, stirring until slightly thickened. Remove from heat and stir in vanilla extract and salt. Let cool slightly.
- Assemble and Bake: Pour half the cheesecake filling over the cooled crust. Drizzle half the butterscotch sauce over the filling. Pour the remaining cheesecake filling over the butterscotch. Drizzle the remaining butterscotch sauce on top. Use a knife or skewer to swirl the butterscotch into the cheesecake.
- Bake at 325°F (160°C) for 30-35 minutes, or until the center is almost set. Let cool completely in the oven with the door ajar to prevent cracking.
- Chill in the refrigerator for at least 4 hours before cutting into bars. Garnish with Hufflepuff-themed candies or extra butterscotch drizzle, if desired.
