- 1 pound ground beef
- 1 packet taco seasoning
- 1 (10 ounce) can enchilada sauce
- 12 corn tortillas
- 2 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium-high heat. Drain any excess grease. Add the taco seasoning packet and follow the instructions on the packet, usually involving adding water and simmering for a few minutes.
- Soften corn tortillas by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or until pliable.
- Spread a thin layer of enchilada sauce on the bottom of a 9×13 inch baking dish.
- Layer 6 corn tortillas to cover the bottom.
- Spread half of the seasoned ground beef over the tortillas.
- Sprinkle with one cup of shredded cheese.
- Repeat the layers: tortillas, remaining ground beef, and another cup of cheese.
- Pour the remaining enchilada sauce over the top layer of cheese.
- Cover the baking dish with aluminum foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for a few minutes before serving.
Notes
- Add diced onions, bell peppers, or zucchini with the ground beef for added nutrition and flavor.
- Use a hotter enchilada sauce or add a pinch of cayenne pepper to the beef mixture for a spicier kick.
- Experiment with different cheeses like Monterey Jack, pepper jack, or a Mexican cheese blend.
- Mix in a can of drained and rinsed black beans or pinto beans with the ground beef.
- Substitute the ground beef with lentils or a vegetarian ground beef substitute to make it vegetarian.
- Serve with a dollop of sour cream or Greek yogurt, fresh cilantro, and diced avocado. A side of Mexican rice and refried beans also complements the casserole well.
