Instructions

Preparing the Cherry Filling

  1. In a medium saucepan, combine chopped cherries, granulated sugar, and cornstarch slurry.
  2. Simmer over medium heat, stirring occasionally, until the mixture thickens, about 5–7 minutes.
  3. Let the cherry filling cool completely before using it to layer in the cups.

Making the Chocolate Mousse

  1. Heat ½ cup of the heavy cream in a saucepan until warm.
  2. Pour it over the chocolate chips and let sit for a minute before stirring to create a smooth ganache.
  3. In a separate bowl, whip the remaining heavy cream with sugar and vanilla until stiff peaks form.
  4. Gently fold the whipped cream into the cooled ganache until light and airy.

Assembling the Cups

  1. Spoon a layer of chocolate mousse into the bottom of each mini dessert cup.
  2. Add a layer of cherry filling, followed by another layer of chocolate mousse.
