Instructions
Preparing the Cherry Filling
- In a medium saucepan, combine chopped cherries, granulated sugar, and cornstarch slurry.
- Simmer over medium heat, stirring occasionally, until the mixture thickens, about 5–7 minutes.
- Let the cherry filling cool completely before using it to layer in the cups.
Making the Chocolate Mousse
- Heat ½ cup of the heavy cream in a saucepan until warm.
- Pour it over the chocolate chips and let sit for a minute before stirring to create a smooth ganache.
- In a separate bowl, whip the remaining heavy cream with sugar and vanilla until stiff peaks form.
- Gently fold the whipped cream into the cooled ganache until light and airy.
Assembling the Cups
- Spoon a layer of chocolate mousse into the bottom of each mini dessert cup.
- Add a layer of cherry filling, followed by another layer of chocolate mousse.
- Repeat until the cups are full, finishing with a final layer of mousse.
- Chill the cups in the refrigerator for at least 1 hour to set.
Garnishing and Serving
- Top with whipped cream, chocolate shavings, or sprinkles for an elegant finish.
- Serve chilled and enjoy!
Notes
- Ensure the chocolate ganache is completely cooled before folding in the whipped cream to avoid deflating the mousse.
- You can prepare the mousse and cherry filling ahead of time and assemble the cups just before serving.
