Instructions

Preparing the Pistachios

  1. Using a food processor or mortar and pestle, finely grind the pistachios until they form a paste-like consistency.
  2. Alternatively, you can use store-bought pistachio paste for convenience.

Making the Cookie Dough

  1. In a large mixing bowl, cream the butter with the granulated sugar and brown sugar until light and fluffy.
  2. Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and pistachio cream (or ground pistachios).
  3. Gradually mix in the flour, baking soda, and salt until fully combined.

Chilling the Dough

  1. Cover the dough and chill it in the refrigerator for at least 30 minutes. This helps enhance the flavor and prevents excessive spreading during baking.

Baking the Cookies
