Instructions
Preparing the Pistachios
- Using a food processor or mortar and pestle, finely grind the pistachios until they form a paste-like consistency.
- Alternatively, you can use store-bought pistachio paste for convenience.
Making the Cookie Dough
- In a large mixing bowl, cream the butter with the granulated sugar and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add the vanilla extract and pistachio cream (or ground pistachios).
- Gradually mix in the flour, baking soda, and salt until fully combined.
- Gently fold in the chocolate chunks and chopped pistachios.
Chilling the Dough
- Cover the dough and chill it in the refrigerator for at least 30 minutes. This helps enhance the flavor and prevents excessive spreading during baking.
Baking the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Scoop out tablespoon-sized balls of dough and place them on the prepared baking sheet, leaving space between each.
- Optionally, sprinkle with flaky sea salt for an added touch of flavor and elegance.
- Bake for 10–12 minutes, or until the edges are golden brown, but the center remains soft.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- Chilling the dough is essential to avoid overly flat cookies.
