Ingredients
Scale
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- 1 ½ cups granulated sugar
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- ½ cup chopped walnuts or pecans (optional)
Instructions
- In a large bowl, combine the granulated sugar, canned pumpkin puree, and vegetable oil. Mix well until thoroughly combined.
- Add the eggs one at a time, mixing after each addition until smooth.
- In a separate bowl, whisk together the all-purpose flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chopped nuts if using.
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- Pour the batter into the prepared pan and spread evenly. Bake for 50-60 minutes or until a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- Don’t Overmix: Overmixing can lead to a tough bread. Mix until just combined.
- Use Fresh Spices: Freshly ground spices provide the best flavor.
- Cool Completely: Allow the bread to cool completely before slicing to prevent crumbling.
- Add Chocolate Chips: For an extra treat, consider adding chocolate chips to the batter.
- Adjust Sweetness: Reduce the sugar slightly if a less sweet bread is preferred.
