Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat chicken breasts dry and place in a bowl or zip-top bag.
- In a small bowl, whisk together Dijon mustard, honey, olive oil, apple cider vinegar, garlic powder, paprika, salt, and pepper.
- Pour marinade over chicken, ensuring each piece is evenly coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Arrange marinated chicken on the prepared baking sheet, making sure they are not overcrowded.
- Bake for 20-25 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before serving. Garnish with fresh parsley, if desired.
