- 1 (14-ounce) can sweetened condensed milk
- ½ cup freshly squeezed key lime juice (or regular lime juice)
- 1 tablespoon lime zest
- Whipped cream and lime slices for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter, then press into a 9-inch pie dish. Bake for 8-10 minutes and let cool slightly.
- In a large bowl, whisk egg yolks until smooth. Add sweetened condensed milk and whisk until fully incorporated.
- Gradually mix in lime juice and zest until smooth and well combined.
- Pour filling into crust and bake for 15-18 minutes until edges are set but center is slightly jiggly. Cool to room temperature, then refrigerate for at least 4 hours before serving with whipped cream and lime garnish.
Notes
- Use freshly squeezed key lime juice for best flavor, but regular lime juice works too.
- Don’t overbake—the center should still be slightly jiggly when removed from oven.
- For a smoother filling, strain the lime juice to remove pulp.
- Chill thoroughly before serving for perfect texture.
- Store leftovers covered in the refrigerator for up to 4 days or freeze for longer storage.
