- 4 bell peppers (any color), halved and seeded
- 1 pound ground beef or turkey
- 1 cup cooked rice (white or brown)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon Italian seasoning

- Salt and pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish and arrange the halved bell peppers cut side up.
- In a large skillet, brown the ground beef or turkey over medium heat, draining any excess grease.
- In a mixing bowl, combine the cooked meat, rice, diced tomatoes, Italian seasoning, garlic powder, salt, and pepper. Mix well.
- Spoon the mixture into each bell pepper half and top with shredded cheddar cheese. Bake for 25-30 minutes until peppers are tender and cheese is melted.
