- 1.5 lbs boneless, skinless chicken breasts, diced
- 2 lbs potatoes, peeled and cubed
- 1 onion, chopped
- 2 cups shredded cheddar cheese
- 1 can (10.75 oz) condensed cream of chicken soup
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Optional: chopped green onions, bacon bits for topping
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the diced chicken, cubed potatoes, and chopped onion.
- Add 1.5 cups of shredded cheddar cheese, cream of chicken soup, milk, garlic powder, paprika, salt, and pepper and mix thoroughly.
- Pour the mixture into a greased 9×13 inch casserole dish, ensuring it’s evenly distributed.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top and bake for 45-50 minutes.
- Let it cool slightly before serving.
