Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced potatoes and sliced sausage. Cook for about 8-10 minutes until browned.
- Add chopped onion and minced garlic, cooking until softened, about 3-5 minutes.
- If using, add bell pepper and season with thyme, smoked paprika, salt, and pepper. Stir well.
- Cover and lower heat, simmer for 10-15 minutes or until potatoes are tender.
