- 1 pound ground beef
- 1 packet taco seasoning
- 1 medium onion, chopped
- 1 (15 ounce) can tomato sauce
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies (such as Rotel)
- 8–10 flour tortillas
- 2 cups shredded cheddar cheese
- Optional toppings: sour cream, salsa, guacamole, cilantro
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain excess grease.
- Add chopped onion and cook until softened, about 5 minutes. Stir in taco seasoning, tomato sauce, black beans, and diced tomatoes. Simmer for 5-10 minutes.
- Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
- Layer tortillas on the bottom of the dish, spread half of the beef mixture on top. Sprinkle one cup of cheese over the beef.
- Add another layer of tortillas, remaining beef mixture, and top with remaining cheese.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
Notes
- Add a layer of refried beans for extra creaminess.
- Use different types of cheese like Monterey Jack or pepper jack for a spicier kick.
- Include veggies like bell peppers or corn for added nutrition.
- Top with your favorite taco toppings such as sour cream, salsa, guacamole, and fresh cilantro.
