  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 medium onion, chopped
  • 1 (15 ounce) can tomato sauce
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies (such as Rotel)
  • 8–10 flour tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, cilantro

Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain excess grease.
  2. Add chopped onion and cook until softened, about 5 minutes. Stir in taco seasoning, tomato sauce, black beans, and diced tomatoes. Simmer for 5-10 minutes.
  3. Preheat the oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  4. Layer tortillas on the bottom of the dish, spread half of the beef mixture on top. Sprinkle one cup of cheese over the beef.
  5. Add another layer of tortillas, remaining beef mixture, and top with remaining cheese.
  6. Cover the dish with aluminum foil and bake for 20 minutes. Remove foil and bake for another 10-15 minutes until cheese is melted and bubbly.
