- Homemade Butterbeer Syrup (Alternative):
- 1 cup butterscotch chips
- 1/2 cup heavy cream
- 1/4 teaspoon rum extract (optional)
Instructions
- Prepare the graham cracker crust by combining crumbs, sugar, and melted butter. Press into a springform pan and bake at 350°F for 8-10 minutes. Cool completely.
- In a large bowl, beat cream cheese and sugar until creamy. Add vanilla, heavy cream, and eggs one at a time, mixing well. Stir in butterbeer syrup.
- Create the butterbeer swirl by melting white chocolate and mixing with butterbeer syrup and gel colors. Swirl into the cheesecake batter.
- Pour the cheesecake batter over the cooled crust, tap to release air bubbles, and bake for 55-65 minutes until only slightly wobbly in the center. Cool in the oven for an hour.
- Chill the cheesecake in the refrigerator for at least 4 hours. Create the topping with colored whipped cream to mimic the Aurora Borealis and sprinkle with edible glitter.
