For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tbsp unsalted butter (melted)
For the Cheesecake Filling:
- 4 (8 oz) packages cream cheese (softened)
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla bean paste (or seeds from 1 vanilla bean pod)
- 3 large eggs
- 1 tsp blue gel food coloring
- 1 tsp cornstarch mixed with 2 tbsp water
For the Vanilla Glaze:
- 1 cup powdered sugar
- 2 tbsp milk
- 1 tsp vanilla extract
Instructions
1. Preparing the Crust
- Preheat oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the mixture is evenly coated.
- Press the crumb mixture into the base of a springform pan to form a firm crust. Bake for 10 minutes, then set aside to cool.
2. Making the Cheesecake Batter
- In a large bowl, beat cream cheese with granulated sugar until smooth.
- Add sour cream, vanilla bean paste, and eggs, one at a time, mixing after each addition.
- Mix in the cornstarch-water mixture for a smooth texture.
- Divide the batter into two equal parts.
- In one half, add blue gel food coloring and mix until you achieve the desired blue shade.
3. Creating the Blue Swirl
- Pour the white cheesecake batter into the prepared crust, then swirl in the blue-colored batter using a toothpick or knife.
- Gently swirl to create a beautiful marble effect.
4. Assembling and Baking
- Bake the cheesecake at 325°F (165°C) for about 55-60 minutes, or until the center is set and slightly jiggly.
- Let the cheesecake cool in the oven with the door slightly ajar for 1 hour, then transfer to the fridge and chill for at least 4 hours (overnight is best).
