Instructions
1. Prepare the Crust
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- Mix crushed graham crackers, sugar, and melted butter in a bowl until combined.
- Press firmly into the bottom of the pan and bake for 10 minutes. Let cool.
2. Make the Cheesecake Filling
- In a large bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla, sour cream, and cornstarch until incorporated.
- Blend in blueberry puree and a few drops of blue food coloring until you achieve a deep Ravenclaw blue.
3. Bake the Cheesecake
- Pour the filling over the crust and smooth the top.
