Instructions
1. Prepare the Crust:
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a 9-inch springform pan, creating an even crust.
- Bake for 10 minutes, then set aside to cool.
2. Make the Cheesecake Batter:
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract, cream soda, and butterscotch syrup, mixing until well incorporated.
- Beat in eggs one at a time, mixing just until combined (avoid overmixing).
- Pour the cheesecake batter into the cooled crust.
3. Create the Galaxy Swirl:
- Melt white chocolate chips in the microwave in 30-second intervals, stirring between each.
- Divide the melted chocolate into three bowls, tinting one blue, one purple, and one black.
- Drizzle the colored chocolate over the cheesecake batter.
- Use a toothpick or skewer to swirl the colors into a galaxy design.
- Lightly sprinkle with edible glitter or luster dust.
4. Bake the Cheesecake:
- Bake at 325°F (160°C) for 50–60 minutes, until the edges are set but the center is slightly jiggly.
- Turn off the oven and crack the door open. Let the cheesecake cool gradually for 1 hour to prevent cracks.
- Transfer to the refrigerator and chill for at least 4 hours or overnight.
5. Decorate & Serve:
