  • 6 tbsp unsalted butter, melted

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup cream soda
  • 2 tbsp butterscotch syrup
  • 3 large eggs

For the Galaxy Swirl Topping:

  • 1 cup white chocolate chips, melted
  • Blue gel food coloring
  • Purple gel food coloring
  • Black gel food coloring
  • Edible glitter or luster dust (silver or gold)

Optional Garnishes:

  • Whipped cream
  • Edible stars or sprinkles
  • Extra butterscotch syrup for drizzling

Instructions

1. Prepare the Crust:

  • Preheat your oven to 325°F (160°C).
  • In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  • Press the mixture into the bottom of a 9-inch springform pan, creating an even crust.
  • Bake for 10 minutes, then set aside to cool.

2. Make the Cheesecake Batter:

  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add vanilla extract, cream soda, and butterscotch syrup, mixing until well incorporated.
  • Beat in eggs one at a time, mixing just until combined (avoid overmixing).
  • Pour the cheesecake batter into the cooled crust.

3. Create the Galaxy Swirl:

  • Melt white chocolate chips in the microwave in 30-second intervals, stirring between each.
  • Divide the melted chocolate into three bowls, tinting one blue, one purple, and one black.
  • Drizzle the colored chocolate over the cheesecake batter.
  • Use a toothpick or skewer to swirl the colors into a galaxy design.
  • Lightly sprinkle with edible glitter or luster dust.

4. Bake the Cheesecake:

  • Bake at 325°F (160°C) for 50–60 minutes, until the edges are set but the center is slightly jiggly.
  • Turn off the oven and crack the door open. Let the cheesecake cool gradually for 1 hour to prevent cracks.
  • Transfer to the refrigerator and chill for at least 4 hours or overnight.

5. Decorate & Serve:

  • Before serving, add whipped cream swirls, edible stars, or a drizzle of butterscotch syrup for extra magic.
  • Use a warm knife (dipped in hot water) to cut clean slices.

Notes

  • Storage: Keep in the refrigerator for up to 5 days or freeze for up to 1 month.
  • Preventing Cracks: Avoid overmixing the batter and let the cheesecake cool gradually.

  • Serving Tip: Serve with a cup of Butterbeer or hot cocoa for the full wizarding experience!
