Instructions

1. Preparing the Crust
  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture evenly into the bottom of the pan. Bake for 8-10 minutes, then let cool.
2. Making the Cheesecake Batter
  1. In a large bowl, beat cream cheese and sugar until smooth.
  2. Add sour cream, vanilla extract, and cream soda, mixing until fully incorporated.
  3. Beat in eggs one at a time, mixing on low speed to avoid overbeating.
3. Creating the Purple Swirls
  1. In a saucepan over medium heat, combine heavy cream, brown sugar, butter, and vanilla. Stir until smooth.
  2. Remove from heat and mix in purple gel food coloring.
  3. Drizzle the purple mixture over the cheesecake batter and use a toothpick or skewer to swirl it.
