For the Crust:
- 1 ½ cups graham cracker crumbs

- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- ¼ cup cream soda

- ½ cup heavy cream
- ½ cup brown sugar
- 4 tbsp unsalted butter
- 1 tsp vanilla extract
- Purple gel food coloring
For Decoration (Optional):
- Edible silver or gold dust
- Edible glitter or sprinkles
Instructions
1. Preparing the Crust
- Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture evenly into the bottom of the pan. Bake for 8-10 minutes, then let cool.
2. Making the Cheesecake Batter
- In a large bowl, beat cream cheese and sugar until smooth.
- Add sour cream, vanilla extract, and cream soda, mixing until fully incorporated.
- Beat in eggs one at a time, mixing on low speed to avoid overbeating.
3. Creating the Purple Swirls
- In a saucepan over medium heat, combine heavy cream, brown sugar, butter, and vanilla. Stir until smooth.
- Remove from heat and mix in purple gel food coloring.
- Drizzle the purple mixture over the cheesecake batter and use a toothpick or skewer to swirl it.
4. Baking the Cheesecake
- Place a baking pan filled with water on the lower oven rack to prevent cracks.
- Bake the cheesecake for 55-65 minutes, or until the center is slightly set.
- Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
5. Decorating the Cheesecake
- Once fully cooled, sprinkle edible silver dust to mimic a starry sky.
- Optionally, add edible glitter or sprinkles for extra magic.
- Chill in the fridge for at least 4 hours before serving.

- Using a water bath helps prevent cracking.
- For a stronger butterbeer flavor, add a splash of butter extract.
