For the Crust:
- 1 ½ cups chocolate graham cracker crumbs (or crushed dark chocolate cookies)
- ¼ cup granulated sugar
- 6 tbsp unsalted butter (melted)
For the Cheesecake Filling:
- 4 (8 oz) packages cream cheese (softened)
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
For the Blueberry Swirl:
- 1 cup fresh or frozen blueberries
- 2 tbsp granulated sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch mixed with 2 tbsp water
Optional Garnish:
- Edible gold dust or sprinkles (for Ravenclaw’s bronze accents)
Instructions
1. Preparing the Crust
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine chocolate graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then remove from the oven and allow to cool completely.
2. Making the Cheesecake Batter
- In a large bowl, beat the cream cheese with an electric mixer until smooth and lump-free.
- Add sugar and sour cream, mixing until well combined.
- Mix in vanilla extract.
- Add eggs one at a time, beating on low speed after each addition until smooth.
3. Creating the Blueberry Swirl
- In a small saucepan, combine blueberries, sugar, and lemon juice.
- Cook over medium heat until the blueberries release their juices and soften.
- Stir in cornstarch mixed with water and cook for 1-2 minutes until the mixture thickens.
- Allow to cool before using.
4. Assembling and Baking
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Drop spoonfuls of the blueberry mixture on top of the batter and swirl with a knife or skewer to create the swirl pattern.
- Bake for 55–60 minutes, until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door cracked.
- Refrigerate for at least 4 hours or overnight to set fully.
