Instructions
- Prepare the Graham Cracker Crust: In a medium bowl, combine graham cracker crumbs and granulated sugar. Pour in melted butter and mix until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch pie plate. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes. Let cool completely before filling.
- Make the Root Beer Filling: In a large bowl, beat softened cream cheese until smooth and creamy. Gradually add sweetened condensed milk and continue beating until well combined. Stir in root beer concentrate and vanilla extract until the filling is smooth and evenly colored. Gently fold in thawed whipped topping until well incorporated.
- Prepare the Butterbeer Frosting: In a saucepan over medium heat, melt butter and brown sugar together, stirring constantly until smooth. Remove from heat and stir in heavy cream. Let the mixture cool slightly. In a large bowl, gradually beat in powdered sugar until the frosting is smooth and creamy. Stir in vanilla extract.
- Assemble the Pie: Pour the root beer filling into the cooled graham cracker crust. Spread evenly. Frost the pie with the prepared butterbeer frosting. Refrigerate the root beer float pie for at least 4 hours, or preferably overnight, to allow the filling to set completely. Serve chilled and enjoy!
