Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 4 oz cream cheese, softened
- 1/4 cup fresh herbs (parsley, chives, or thyme), chopped
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- In a mixing bowl, combine the softened cream cheese, chopped fresh herbs, garlic powder, salt, and pepper. Mix until well combined.
- Lay each chicken breast on a cutting board. Using a sharp knife, carefully cut a deep pocket into the side of each chicken breast without cutting all the way through.
- Fill each pocket with the cream cheese mixture. Ensure the filling is evenly distributed.
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil. Place the stuffed chicken breasts in the dish. Drizzle the tops of the chicken with the remaining olive oil and season with additional salt and pepper.
- Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
Notes
- Add-ins: Consider adding sun-dried tomatoes, spinach, or crumbled bacon to the cream cheese mixture for extra flavor.
- Cheese variations: Experiment with different types of cheese like feta or mozzarella for a unique twist.
- Seasoning: Adjust the herbs and spices to your liking. Smoked paprika or onion powder can add depth.
- Serving suggestions: Serve with roasted vegetables, a fresh salad, or rice for a complete meal.
