- 1/4 cup mint extract

Instructions
- Prepare the Oreo crust: Combine crushed Oreo cookies with melted butter and press into the bottom of a springform pan.
- Make the cheesecake filling: Beat cream cheese and sugar until smooth, then add vanilla and eggs, mixing gradually. Stir in heavy cream.
- Add mint and chocolate: Divide filling; mix melted chocolate into one half and add mint extract with green food coloring to the other.
- Assemble and bake: Alternate dollops of chocolate and mint fillings in the crust. Swirl together and bake at 325°F (160°C) for 60-70 minutes. Let cool and chill before serving.
