- 1 cup sour cream

- ¼ cup cream soda
- 1 tsp peppermint extract
- 3 large eggs
For the Mint Drizzle:
- ½ cup powdered sugar
- 1–2 tsp milk (or cream)
- ½ tsp peppermint extract
- Green gel food coloring

- Edible silver dust or sprinkles
Instructions
1. Preparing the Dark Chocolate Crust
- Preheat oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper.
- In a bowl, mix chocolate cookie crumbs, sugar, and melted butter until combined.
- Press the mixture evenly into the pan and bake for 10 minutes. Let cool.
2. Making the Cheesecake Batter
- In a large bowl, beat cream cheese and sugar until smooth.
- Mix in sour cream, vanilla extract, cream soda, and peppermint extract until well combined.
- Add eggs one at a time, mixing on low speed to avoid overmixing.
3. Baking the Cheesecake Bars
- Pour the batter over the cooled crust and smooth the top.
- Bake for 40-45 minutes, until the center is slightly jiggly but set around the edges.
- Turn off the oven and let cheesecake cool inside with the door slightly open.
- Once cool, refrigerate for at least 4 hours or overnight.
4. Creating the Mint Drizzle
- In a bowl, whisk together powdered sugar, milk, and peppermint extract until smooth.
- Add green gel food coloring until the desired shade is reached.
5. Decorating the Cheesecake Bars
- Drizzle the mint mixture over the chilled cheesecake bars.
- Sprinkle with edible silver dust or sprinkles for a magical touch.
- Slice into bars using a warm knife for clean edges.
