  • ¼ cup granulated sugar
  • 6 tbsp unsalted butter (melted)

For the Cheesecake Filling:

  • 4 (8 oz) packages cream cheese (softened)
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 tsp vanilla extract
  • 3 large eggs

For the Blue Velvet Swirl:

  • ½ cup heavy cream
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • Blue gel food coloring
  • Edible silver or gold stars (for decoration)

For the Shimmer Effect:

  • Edible glitter or luster dust

Instructions

1. Preparing the Crust

  1. Preheat your oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture evenly into the bottom of the prepared pan. Chill for 10 minutes while making the filling.

2. Making the Cheesecake Batter

  1. In a large mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  2. Add sour cream and vanilla extract, mixing until fully incorporated.
  3. One at a time, add the eggs, mixing just until combined. Do not overmix.
  4. Pour the cheesecake batter over the chilled crust, smoothing the top with a spatula.

3. Creating the Blue Velvet Swirl

  1. In a separate bowl, mix heavy cream, powdered sugar, and vanilla. Add blue gel food coloring until desired shade is reached.
  2. Drizzle the blue mixture over the cheesecake batter.
  3. Use a toothpick or skewer to create a swirling, galaxy-like pattern.

4. Adding the Shimmer

  1. Lightly sprinkle edible glitter over the cheesecake.
  2. Arrange edible silver or gold stars across the surface for a celestial effect.

5. Baking the Cheesecake Bars

  1. Bake for 40–45 minutes, or until the center is set but slightly jiggly.
  2. Turn off the oven and let the bars cool inside with the door slightly open for 1 hour.
  3. Refrigerate for at least 4 hours (or overnight) before slicing.

6. Serving & Presentation

  1. Use a warm knife to slice cleanly.
  2. Arrange on a platter and dust with extra edible glitter for a dazzling finish!
