Instructions
- Making the Pie Crust: In a mixing bowl, whisk together flour and salt. Cut in cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Form into a disc, wrap in plastic wrap, and chill for 30 minutes. Roll out the dough on a floured surface and transfer to a pie dish. Prick the bottom with a fork, line with parchment paper, and fill with pie weights or dried beans. Blind bake at 375°F (190°C) for 15 minutes. Remove weights and bake for an additional 5 minutes. Let cool.
- Preparing the Root Beer Filling: In a saucepan over medium heat, whisk together root beer, milk, heavy cream, sugar, and cornstarch. In a separate bowl, whisk egg yolks until smooth. Remove from heat and stir in butter, vanilla extract, and cinnamon until smooth. Pour the filling into the cooled pie crust and smooth the surface. Chill in the refrigerator for at least 4 hours or overnight to set.
- Creating the Golden Sugar Dust: In a small bowl, mix granulated sugar with edible gold luster dust until evenly coated. Sprinkle the golden sugar generously over the chilled pie for a magical shimmer. Alternatively, use gold sprinkles for a simpler effect.
- Finishing Touches: Slice the pie and serve chilled. For extra flair, garnish with whipped cream or a drizzle of caramel sauce.
