Instructions

  1. Preparing the Roast: Pat the beef chuck roast dry with paper towels and season lightly with salt and pepper. This step helps enhance browning during the initial sear.
  2. Searing the Meat: Preheat your Traeger grill to 400°F (200°C). Place the roast directly on the grill grates and sear for 3–4 minutes per side until browned. Remove from the grill and set aside.
  3. Assembling the Ingredients: Lower the grill temperature to 225°F (110°C). Place the seared roast in a disposable aluminum pan or cast iron skillet. Sprinkle the ranch and au jus mixes evenly over the top. Add the stick of butter, pepperoncini peppers, and their juice. Cover the pan tightly with foil.
  4. Smoking the Roast: Return the covered pan to the grill and cook for 4–6 hours, or until the internal temperature reaches 195–205°F (90–96°C). The meat should be fork-tender and easily shreddable. Optionally, increase the grill temperature to 350°F (175°C) for the last 30 minutes to crisp up the exterior.
